Exotic salad / Salata exotica

You know the situation when you are hungry and you have few ingredients and then you make the best dish ever?? This happend to me yesterday...i made the best salad ever!!
What i have put inside:
- lettuce
- red pepper
- cherry tomatoes
- an apple
- some pomegranate seeds
- nuts
- a little bit of fennel
- some croutons
- a cucumber
- salt
- vinaigrette sauce

You mix them and Voila..a flavor salad!!


 Stii acea situatie cand iti este foame si ai doar cateva ingrediente la indemana? Le combini cumva si atunci iti iese cea mai delicioasa mancare?? Asta mi s-a intamplat mie ieri...si mi-a iesit cea mai buna salata!!
Ce am pus in ea:
- salata verde
- ardei rosu
- rosii cherry
- un mar
- cateva boabe de rodie
- nuci
- un pic de fenicul
- crutoane
- un castravete
- sare
- sos vinegrette

Le amesteci si..ai obtinut o salata plina de arome!!

Macadamia nuts / Nuci de Macadamia

First of all i want to apologize for my long absence. I've been busy with my little one and i didn't had time for anything.
A couple days ago I have discovered these nuts at my local supplier and i bought 100gr. As soon i got home i searched on internet what are their proprieties (as all nuts are amazing aliments) .
Let me show you some of them:

- Macadamia nuts have sweet taste and are rich source of energy. 100 g of nuts provide about 718 calorie/100 g, which is one of the highest values among nuts

- They are packed with numerous health-benefiting nutrients, minerals, antioxidants and vitamins that are essential for optimum health and wellness.

- 100 g of macadamia provides 8.6 g or 23% of daily-recommended levels of dietary fiber. Additionally, they are a very good source of phytosterols such as β-sitosterol. However, the nuts contain no cholesterol.

- Macadamias are an excellent source of minerals such as calcium, iron, magnesium, manganese and zinc. 100 g nuts provide 3.6 µg of selenium. Selenium is a cardio-protective micro-mineral and an important anti-oxidant cofactor for glutathione peroxidase enzyme.

- Furthermore, the nuts are also rich in many important B-complex vitamins that are vital for metabolic functions. 100 g of nuts provide 15% of niacin, 21% of pyridoxine (vitamin B-6), 100% of thiamin, and 12% of riboflavin.

Until now i ate them raw ( in salads and as snacks) and cooked (in noodles) .

You have to include them in your everyday snack!!

Spicy pepper stew / Mancare picanta de ardei

First of all i want to say sorry that i didn't wrote for a long time..but i've been busy with some other projects and work.

Today's recipe is very easy and perfect for this hot summer.
All you need is:
- red, yellow and green peppers
- onion and garlic
- peeled tomatoes
- carrots
- chilli
- oregano, rosemary and thyme
- olive oil
- salt and pepper

Slice the peppers, carrots and onion very thin. Heat one pan with a little bit of olive oil and put the peppers,carrots, onion and garlic in. After a few minutes add the tomatoes (very thin chopped with all the sauce that they left) and leave it for a few minutes. At the end put the chilli and all the herbs.
 


We ate it with pickles.

In primu rand vreau sa-mi cer scuze pentru ca nu am mai scris demult, dar am fost ocupata cu alte proiecte si cu serviciul.
Reteta de azi este foarte usoara si e tocmai buna pt canicula de afara.
Tot ce va trebuie este:
- ardei rosii galbeni si verzi
-ceapa si usruroi
-rosii decojite
-morcovi
-ardei iute
- oregano, busuioc si cimbru
-ulei de masline
- sare si piper

Se felieaza ardeii, morcovii si ceapa foarte subtire. Se incalzeste o tigaie cu putin ulei si se pun toate legumele inauntru. Dupa cateva minute adaugam si rosile (foarte marunt tocate, impreuna cu sosul pe care l-au lasat) si se lasa cateva minute. La sfarsit se adauga ardeiul iute si toate condimentele.

Noi am mancat mancarica cu muraturi.

Mushrooms cream soup / Supa crema de ciuperci

It awesome..so i will make it short:
- 500gr of fresh mushrooms (i used a mix of them - they have different flavors)
- 1 onion
- olive oil
- vegetable soup or simple water
- vegetable cream. Here we have one from Alpro and one from Richs. I like this one from Richs.

E minunata..asa ca o nu o mai lungesc mult:
- 500gr ciuperci proaspete (eu am folosit un amestesc - fiecare are gustul ei)
- 1 ceapa
- ulei de masline
- supa de legume sau apa
- smanatana vegetala. Aici gasim de la Alpro si de la Richs. Mie imi place cea de la Richs.

First chop the onion and cook it in a pot with  a little bit oil until is translucent. Then add the chopped mushrooms and vegetable soup / water and let it boil for 30min. 


After that put the mushrooms into a blender and mix them until you have the texture that you want. In the end pour some liquid from the pot that you have boiled them. 
Put this composition again into a pot and add the cream, salt and pepper. Let it 5 minutes.

Meanwhile let's make some croutons. Slice some bread pour some olive oil on each on of it. We put also some Za'atar on them. Put them into the oven for 5 minutes or till the are crunchy.

I serve it with some parsley.


It was so good that my husband asked for another plate. :-)

Mai intai tocam ceapa si o calim in putin ulei. Apoi adaugam ciupercile , supa sau apa si o lasam sa fiarba 30minute.

Dupa ce ciupercile au fiert, le punem intr-un blender pana cand obtinem textura dorita. Apoi adaugam din lichidul din oala in care au fiert.

Intre timp putem sa facem niste crutoane. Felieaza o paine, stropeste feliile cu putin ulei de masline. Noi am adaugat si putin Za'atar peste ele. Puneti-le la cuptor pentru 5 minute sau pana cand devin crocante

L-am servit cu putin patrunjel.

A fost asa de bun incat sotul meu a mai cerut o portie. :-)

Berries Juice / Suc de fructe de padure

You will love this juice, it has flavor, it's healthy and it's yummy.
You will need:
- apples (i put 1)
- oranges (I put 1)
- berries (what you like, i put a mix of them)
- hazelnut / soy / almonds milk/yogurt (i used soy yogurt)

Just put all of them into a blender and mix them well...

After the blending..you will got a colorful, wonderful juice.

Homemade Hummus / Humus de casa

Probably everybody heard of Hummus, a Middle east meal that everybody eats anytime of the day. It is true. Over here you can mix hummus with what you want, and as a non-middle east person I can say that it is delicious. So i have decided to make my own hummus. The recipe it's easy , but it's very painstaking.
All you need is:
- chickpeas (fresh or frozen)
- garlic
- tahini (sesame paste)
- grounded cumin
- coriander
- salt and pepper
- juice from half a lemon
- olive oil

If you have fresh chickpeas then you have to let them soak over the night (minimum 12 hours) then you have to boil for 2-3 hours, with 2-3 cloves of garlic (don't cut it, put it whole).if you have the frozen one, you just have to put it to boil.


There are 2 things very important:
- change the water 2 times, but keep the garlics and don't add salt anymore
- after boiling don't throw the water, you will use it after.


After the chickpeas are boil (you can tell by taking one chickpea between fingers and try to smash it) you have to clean all of the chickpeas by their coat. This is very time consuming, if you have kids then you are lucky :-).
Now it's time to make the prepare the tahini. Take 1-2 spoons of tahini paste, add the lemon juice and a spoon of oil, and mix it well. You will see that it will change the color. It has to be creamy.
After all of this work is done, put them into a blender, add 3 cloves of garlic, salt, pepper, a little bit of the water that you used for boiling, the tahini that you just prepared, the cumin and coriander.
Mix them well, until you have a creamy composition. If it's needed add more water that you used for boiling.

After then you can it with mushrooms, or add on the plate some paprika.
