Homemade Hummus / Humus de casa

Probably everybody heard of Hummus, a Middle east meal that everybody eats anytime of the day. It is true. Over here you can mix hummus with what you want, and as a non-middle east person I can say that it is delicious. So i have decided to make my own hummus. The recipe it's easy , but it's very painstaking.
All you need is:
- chickpeas (fresh or frozen)
- garlic
- tahini (sesame paste)
- grounded cumin
- coriander
- salt and pepper
- juice from half a lemon
- olive oil

If you have fresh chickpeas then you have to let them soak over the night (minimum 12 hours) then you have to boil for 2-3 hours, with 2-3 cloves of garlic (don't cut it, put it whole).if you have the frozen one, you just have to put it to boil.


There are 2 things very important:
- change the water 2 times, but keep the garlics and don't add salt anymore
- after boiling don't throw the water, you will use it after.


After the chickpeas are boil (you can tell by taking one chickpea between fingers and try to smash it) you have to clean all of the chickpeas by their coat. This is very time consuming, if you have kids then you are lucky :-).
Now it's time to make the prepare the tahini. Take 1-2 spoons of tahini paste, add the lemon juice and a spoon of oil, and mix it well. You will see that it will change the color. It has to be creamy.
After all of this work is done, put them into a blender, add 3 cloves of garlic, salt, pepper, a little bit of the water that you used for boiling, the tahini that you just prepared, the cumin and coriander.
Mix them well, until you have a creamy composition. If it's needed add more water that you used for boiling.

After then you can it with mushrooms, or add on the plate some paprika.
